In the mountains of the Sierra Madre, ideal elevation, cooler temperatures, and careful farm management create the conditions for exceptional Arabica coffee. Smallholder farmers tend their plants through seasons of growth, nurturing each tree toward harvest.

Harvest & Processing
Chiapas highlandsWhen coffee cherries ripen to a deep red, they are picked by hand — selecting only the ripest fruit. After harvesting, cherries are processed to reveal the green coffee beans inside. Whether washed for clarity or naturally processed for sweetness, this step shapes the coffee's final character.

Selection & Transport
Mexico to MinnesotaWe select lots based on cup quality, traceability, and organic documentation. The green coffee travels north from Chiapas to the Twin Cities — following the path of The Xaman, our north-star guide. Every lot is chosen because we want to share it with our community.
